1. 欢迎客人：打开大门，立于领位台内；见到客人走至2米外后，走出咨客台，左手握菜牌。

2. 询问预订：询问客人是否预订。有三种情况：

   第一：接受预订，在此时要问清楚客人姓名、订座人数、就餐时间、联系方法和客人的特殊要求。

   第二：如客人已预订，带其到事先已订好的桌前。

   第三：如客人未预定，按客人要求和人数带入相应的餐桌。

3. 引导入座，打开菜单及饮料单从右边递至客人。

4. 厅面服务员听取开胃饮品单：询问客人餐前酒，并重复客人所点饮料名称。

5. 服务餐前饮品。

6. 听取点菜，认真听取客人的点菜，重复客人所点内容，得到客人确认内容后再离开。

7. 根据客人用餐节奏上菜。如头盘、汤、沙律、主菜、甜品。

8. 席间服务。包括添酒水，更换烟灰缸等。

9. 结帐并送客，与客人告别，并欢迎客人再次光临。

10. 清理餐桌，等待下一轮顾客。
